This Turkish dish is an exciting mix up to the weekly meatloaf or meatballs recipe. Pair these flavorful Mediterranean morsels with spicy pickles, rich sauces, and fresh Saj for a delicious family favorite!

Shwarma

Ingredients

  • 3.5Lb Beef Mince
  • 1Lg Yellow Onion, finely minced
  • 1 Bunch Italian or Flat Leaf Parsley, minced (stems and leaves)
  • 2T 7 Spice
  • 2T Unflavored Bread Crumbs
  • 2T Milk
  • 2T Garlic paste
  • Salt
  • Pepper

Steps

  1. In a large bowl, combine meat, onion, parsley, spices, garlic paste, salt and pepper. Set aside.
  2. In a small bowl, combine milk and bread crumb to form a panade
  3. Combine the meat and panade and portion into long flat rectangles around a skewer or by making a meat tube in your hand while pressing out the meat with the fingers of the opposite hand.
  4. Once portioned, heat a large brasier or non-stick skillet with a lid over a medium-low heat.
  5. Cook covered on both sides until 160F.
  6. Serve with sliced pickles, thin sliced tomatoes, Saj, shaved lettuce, roasted potatoes, and Lemon Dill Sauce.
  7. If serving as shwarma, fry the wrapped shwarma in the reserved beef fats.
