Tuscan Beans

This is a fast weeknight “people are coming over” dish. Top with a seared bone-in chicken thigh and you’re good to go.

Ingredients

  • 3 strips Bacon, cut into postage stamp sized chunks
  • 2-3T Sun-Dried Tomato paste, or half a jar sun-dried tomatoes blended with a 1/4 water
  • 1/4C Minced Dried Onion
  • 1 14oz can Fancy Spinach (or fresh)
  • 2 14oz cans Northern White Beans
  • 1T Knorr Tomato & Chicken Broth Powder
  • 1T Knorr Chicken Broth Powder (or 2, if Tomato & Chicken isn’t available)

Steps

  1. Saute bacon in the bottom of a pan with 2-3T of water.
  2. Pour off the bacon grease and save for later.
  3. Add tomato paste, cook until caramelized.
  4. Add minced dried onion and half a cup of water, deglazing the pan.
  5. Cook until water is mostly gone.
  6. Add spinach, beans, and broth.
  7. Add 2C of water, and bring to a boil.
  8. Simmer until broth thickens.

Serve with pangrattato or a chunk of crusty loaf.
