Chicken and Tomato Ditalini

Ingredients

  • 4 Chicken breasts, seasoned with Cavender’s Greek Seasoning
  • 1Lg Onion, minced
  • 1Qt Grape Tomatoes, halved
  • 1-2T Knorr Chicken Broth Powder or 4C Chicken Broth
  • 1C Whole Milk or 1/2C Heavy Cream
  • 1T Parsley
  • 1T Italian Seasoning
  • 1 block Boursin Cheese (We like Shallot and Chive)
  • 1Lb Ditalini Pasta

Steps

  1. In a large skillet or brazier with a tight fitting lid, saute the chicken on both sides.
  2. Fry onion and tomatoes until onions are clear and tomatoes begin to char.
  3. Deglaze the pan with chicken broth and milk.
  4. Add the ditalini, parsley and Italian seasoning.
  5. Cover tightly, bring to a boil, and reduce heat to low.
  6. Cook until pasta is soft and remove from heat.
  7. Add the Boursin cheese and stir to melt.
  8. Reintroduce the chicken.
  9. Enjoy!
