Black Bean Bake

Ingredients
- 1Lb Taco Meat
- 1T Jarlic
- 1 6oz Can Tomato Paste
- 1T Dried Minced Onion (or fresh equivalent)
- 1C Beef Broth
- 1/2T Smoked Paprika
- 1/2T Cumin
- 1/4T Chili Powder
- 1 14oz Can Rotel
- 2 14oz Cans Black Beans, drained and rinsed
- 1Lb Taco Blend Shredded Cheese
Steps
- Preheat oven to broil/450F.
- In a brasier over medium heat, bring the taco meat to temp.
- Add the garlic, onion, and tomato paste, and cook until fragrant, 3-5 minutes.
- Add the dried spices and cook until fragrant, about 1 minute.
- Add the black beans and Rotel and heat through.
- Top with shredded cheese, and place uncovered under the broiler. Bake until melted.
- Serve with tortilla chips, Fritos Scoops, or use as a burrito filling.
Optional
Lime & Cilantro Crema
- Using a stick blender and a mason jar, combine 2C sour cream, 1T Tajin seasoning, leaves of one cilantro bunch, and the juice & zest of one lime. Blend until smooth. Add additional sour cream to thicken as necessary.
