Ingredients

  • 1Lb Taco Meat
  • 1T Jarlic
  • 1 6oz Can Tomato Paste
  • 1T Dried Minced Onion (or fresh equivalent)
  • 1C Beef Broth
  • 1/2T Smoked Paprika
  • 1/2T Cumin
  • 1/4T Chili Powder
  • 1 14oz Can Rotel
  • 2 14oz Cans Black Beans, drained and rinsed
  • 1Lb Taco Blend Shredded Cheese

Steps

  1. Preheat oven to broil/450F.
  2. In a brasier over medium heat, bring the taco meat to temp.
  3. Add the garlic, onion, and tomato paste, and cook until fragrant, 3-5 minutes.
  4. Add the dried spices and cook until fragrant, about 1 minute.
  5. Add the black beans and Rotel and heat through.
  6. Top with shredded cheese, and place uncovered under the broiler. Bake until melted.
  7. Serve with tortilla chips, Fritos Scoops, or use as a burrito filling.

Optional

Lime & Cilantro Crema

  • Using a stick blender and a mason jar, combine 2C sour cream, 1T Tajin seasoning, leaves of one cilantro bunch, and the juice & zest of one lime. Blend until smooth. Add additional sour cream to thicken as necessary.
